Chicken Fajita Bowls
(Bana's Way)
Prep time: 15 mins
Cooking time: 15-20 mins

​Ingredients:
2 tbsp lime juice
1 tbsp oil
1 tbsp fajita seasoning
Salt
4 chicken thighs
1 bell pepper
2 cups white rice
1 tbsp lime juice
400g black beans
400g corn
1 red onion
1 avocado
2 tbsp olive oil
½ tsp salt
Sour cream

Cut your chicken thighs into cubes, and season them well using salt, pepper, lime, olive oil, cumin, chilli, and cilantro, then mix it and let it marinate for 30 mins.

Add olive oil to a pan and stir around for about 8 mins per side.

After done, add the chicken to the side, and add the peppers with an extra drizzle of olive oil. Add the onions in after 2 mins, and cook till the juices dry.

Set the onion and peppers to the side, and add the black beans and the corn into the pan.

Rice:

Add the rice with chicken broth, or boiling water, with garlic in a pot over high heat. Keep putting the heat lower until the rice fully cooks through.

Fluff it up with a fork, and if you would like to add more flavour, add lime juice and cilantro, and finally salt and pepper to taste.

Assembling:

Add the rice, which you add the beans, corn, pepper and onion on top, then add the chicken cubes next to it. You either put the guacamole and sour cream on top or on the side.
